How to cook chicken on Thanksgiving?

I do a whole bird for Thanksgiving instead of turkey. It's just my husband and this year I so you do not want a ton of leftovers. Already purchased the turkey. I want Season chicken with salt, black pepper, fresh garlic, and rosemary. I have no baking. I was wondering how to cook. Would it be good in the Crock-Pot do you think? Or do I roast in a glass dish? How long? Should I fill the cavity with something? I do not want to put the filling into the cavity, but could not onion and celery for flavor or something.
